Ennai Kathirikai Varuval

  • Small brinjals/eggplant : 8
  • Cooking oil : 3 tbsp
  • Mustard seeds : 1 tsp
  • Curry leaves : a few
  • Salt to taste
For masala:
  • Oil: 1 tsp
  • Coriander seeds : 2 tbsp
  • Channa dal : 2 tbsp
  • Red chillies: 6-7
  • Asafoetida : a pinch
  • Salt to taste
Method of Preparation:
Heat 1 tsp of oil in a pan and add channa dhal and coriander seeds and fry it and keep it separately. Then fry red chillies followed by asafetida. Then put all the ingredients in the mixie and grind it and keep it separately. The powder should be little bit coarse.
Split brinjal into four parts till half and stuff the masala inside the brinjal.
Now heat 3 tbsp of oil in a pan, add mustard seeds and allow to splutter and then add curry leaves followed by the stuffed brinjals.
Fry them till it becomes soft to touch. Cover and cook if necessary.
